So I have a new favorite food. It actually has a few different names and there are a lot of different ways to make it, but it is so good! A girl from my book club brought it, so I made it up in Utah for my family reunion and then for a barbeque we had with Chad's cousins, and I made it once we got home! I love it! Here is what I put in it:
Texas Salsa (or Veggie Salsa or Texas Caviar)
1 to 2 cans black beans
1 can kidney beans
1 can black eyed peas
1 can chick peas (garbanzo beans, but you gotta keep it southern!)
1 to 2 tomatoes
1 green pepper
corn
onion
green onion
cilantro (this is the best part)
1 bottle zesty italian dressing
drain beans. chop all the veggies. mix together in a bowl with italian dressing! grab some chips and dig in - easy!
Here are some optional ingredients, which is what makes this such a great recipe!
red, yellow, or orange peppers
cheese, cut into chunks
avacado
any other beans that you like
any other veggies that you like
You could also add bacon or chicken or anything else you want!
It is so yummy and a great summer side dish!
